Rich Chocolate Cake

Serves: 10-12

Preparation time: 20 minutes

Cooking time: 1 hr & 5 minutes


125g butter, chopped

375g dark chocolate, chopped

1 cup brown sugar

1/4 cup plain flour, sifted

2 tbsp baileys

1 cup almond meal

5 eggs

cocoa, for dusting

berries and cream to sever


1.Preheat oven to 170oC.

2.Place the butter and chocolate in the bowl place in the microwave or in a heatproof bowl over a saucepan of simmering water.

3.Add the sugar, flour, baileys and almond meal and mix to combine. Add the eggs and mix well.

4.Pour mixture into a greased 22cm round spring form tin lined with non-stick baking paper. Cover the tin with aluminum foil and bake for 1 hour and 5 minutes or a skewer comes out clean.

5.Uncover and cool in the tin. Dust with cocoa and serve with berries and cream.
